Penne Rosa with Shrimp


I had been making a lot of chicken, and wanted to try a new protein - enter shrimp! I found this and loved that it called for Greek yogurt, and I was intrigued.

Ingredients:
  1. 12 ounce pasta (I used penne but you could use anything like bow tie)
  2. 1 tbsp olive oil
  3. 4 cloves minced garlic
  4. Pinch crushed red pepper flakes
  5. 8 ounces of mushrooms, cleaned and sliced
  6. 2 medium tomatoes chopped
  7. Salt and pepper
  8. 4 cups fresh spinach
  9. 10 ounces medium raw shrimp
  10. 1/2 c. marinara sauce
  11. 1/3 c. Greek yogurt (any kind you want!)
  12. 1/3 c. grated parmesan cheese
 Directions
  1. Peel and devein shrimp 
  2. Cook penne, drain, and set aside
  3. In a large skillet, heat olive over medium low heat
  4. Add in garlic and red pepper flakes and cook for 2 minutes
  5. Add in mushrooms, tomatoes, and salt and pepper, and cook for 7 minutes
  6. Turn heat to medium high and add shrimp. Stir and cook for 3 minutes. Make sure shrimp are pink and opaque from all sides
  7. Remove from heat, add in spinach, and cover pan with lid to let spinach wilt
  8. Remove lid and put heat on low. Add pasta, yogurt, and pasta sauce. Mix and let heat for 5 minutes
  9. Put on plate and add cheese
