Easy Tomato Sauce

  • 1/4 c. olive oil
  • 1 c. finely chopped onions
  • 3/4 c. finely chopped carrots
  • 3/4 c. finely chopped celery
  • 6 1/2 c. (52 oz) canned whole tomatoes, undrained
  • 1 garlic clove, minced
  • 1 tbsp. salt
  • 1 1/2 tsp. sugar
  1. Heat oil in large saucepan. Add onions, carrots, and celery. Cook and stir a few minutes or until crisp and tender (do not let them brown)
  2. Add remaining ingredients; simmer, uncovered, for 45 minutes or until thickened, stirring occasionally
  3. Pass through a food mill or blend slightly with immersion blender. Taste and adjust seasonings as desired
