Healthy Vegetable Fried Rice


I love vegetable fried rice. There is this hole in the wall Chinese restaurant by my parent's house (House of Peking in Highwood, Illinois) that we would order from time to time, and they're friend rice is outstanding. Of course, anything with the word "fried" in the title is not going to be the most healthy option! So here is where I tried to make something that was healthier but still tasted delicious

Ingredients
  1. Rice (using leftover rice is best. I had day old brown rice, but white would work well also)
  2. 2 tbsp olive oil
  3. Vegetables! (you can use anything you like/anything you have. I used sugar snap peas, peas, carrots, edamame)
  4. 1 tbsp soy sauce
  5. Hard boiled egg
  6. Scallions
Directions
  1. Heat olive oil in pan over medium
  2. Add in vegetables and cook for about 5 minutes (until they soften but don't soften too much)
  3. Pour in rice and soy sauce, stir and let sit for 2 minutes
  4. Top with chopped up hard boiled egg and cut up scallions if you want!
If you want to add meat, chicken, shrimp, or tofu sounds like another delicious topping.
