Parmesan Crusted Chicken

I made this meal for my in-laws and it was a hit! I served the chicken with the Garlic Butter and Spinach Pasta and Corn on the Cob

  • 2 boneless skinless chicken breasts
  • 1/3 c. mayonnaise
  • 1/4 c. Parmesan cheese
  • 1 1/2 tbsp. Italian breadcrumbs
  1. Preheat oven to 425 degrees
  2. Trim fat off chicken and cut each breast in half so you have 4 thin breasts
  3. Cover baking sheet with wax paper and place chicken on top
  4. Combine cheese and mayonnaise, and cover chicken
  5. Cover in breadcrumbs
  6. Cook for 15 minutes, or until chicken is thoroughly cooked
