Creamy Avocado Pasta with Roasted Tomatoes


I bought a huge sack of avocados from Costco and didn't know what to do with them. This was delicious! Fresh tasting, and totally took away my craving for a heavy alfredo.

Ingredients:
  • 12 small tomatoes, cut in half
  • 4 tbsp olive oil
  •  Fettucini
  • 2 ripe avocados
  • 2 cloves of garlic (I use pre-minced)
  • 2 tbsp lemon juice
  • Parmesan cheese
  • Salt and pepper to taste

 Directions:
  1.  Preheat over to 300 degrees
  2. Place tomatoes on baking sheet with parchment paper. Drizzle with olive oil, and bake for one hour, lightly mixing half way through
  3. Cook pasta and set aside (I always cook al dente, about a minute or two before ready)
  4. Cut avocados in half, remove the seed, and then remove the skins 
  5. Put avocado in food processor with 2 tbsp olive oil, garlic, salt, and lemon juice. Pulse until smooth and creamy, scraping down sides as necessary
  6. Add avocado mixture over pasta until everything is covered
  7. Top with tomatoes, parmesan cheese, and salt and pepper
