Breakfast "Pizza"


There is an amazing restaurant called Frasca a few blocks away from our apartment. Most times when my parents come down to the city, they treat us. They are known for their pizzas, and have an amazing breakfast pizza on their brunch menu: "3 over easy eggs, sausage, bacon, and cheese atop our homemade crust." You can also add prosciutto and hollandaise for an extra few dollars, which we always do. It's incredible, and even better cold. This was inspired by that

Ingredients
  • Pita (or make two ingredient pizza dough, recipe here)
  • 1/2 avocado, pitted
  • 1 tbsp pesto
  • 1 c. spinach
  • 2 slices turkey bacon, chopped up
  • 1 egg
  • 1 slice of cheese
Directions:
  1. Preheat oven to 350 degrees
  2. Scoop out avocado and mix with pesto, and then spread onto pita
  3. Top with spinach, turkey bacon pieces, slice of cheese, and egg
  4. Bake for 20 minutes or until egg is done to your liking and cheese is melted
The egg may run off of the pita a little bit. You can try to make a little "pool" with your avocado and pesto so it stays put, or let it run off and don't worry about it! The other great thing about this was I made it for breakfast and wasn't hungry again until dinner - super filling!
