Pizza Con Quattro Formaggi (Four Cheese Pizza)


My sister-in-law Emily bought Andrew and me a gift certificate to the Wooden Spoon in Chicago as a Christmas present. We went to a cooking class and had such a great time! If you're in the Chicago area I would highly suggest you check it out.

Ingredients:
  • 1 recipe basic pizza dough
  • Cornmeal
  • 1/2 c. Gorgonzola or bleu cheese, sliced or crumbled
  • 1/2 c. chopped or shredded mozzarella cheese
  • 1/2 c. firm goat cheese
  • 1/2 c. shredded sharp Cheddar cheese
  • 4 fresh sage leaves
  • 1 tbsp. chopped parsley
  • Salt and pepper
  • 3 tbsp. olive oil
Directions:
  1. Heat oven and pizza stone to 475 degrees for at least 20 minutes
  2. Roll out dough onto lightly floured surface
  3. Transfer dough to a pizza peal sprinkled with cornmeal to ensure that the pizza will slide off the peal onto the pizza stone
  4. Arrange the bleu cheese on one quarter of the pizza, and the mozzarella on the other, leaving about 1/4 inch edge. Arrange remaining cheeses on the remaining 2 quarters.
  5. Sprinkle with herbs, salt, pepper, and oil
  6. Immediately bake 15-20 minutes, or until crust is golden brown and the cheeses are bubbly
You can use any combination of cheese, but choose 4 that are distinctly different
