Loaded Quinoa Veggie Burger with Eggvocado

My friends and I have been watching the Bachelor and the Bachelorette together since Ali Fedotowsky's season. I have been cooking enough that I finally wanted an audience! We're a pretty healthy group so I thought this would be the perfect meal.

Loaded Quinoa Veggie Burger

Ingredients:
  1. 1/2 c uncooked quinoa
  2. 1 carrot, chopped
  3. 4 scallions, sliced
  4. 2 cloves of garlic (I used minced)
  5. 15 ounces can of black beans
  6. 1/4 c. Italian breadcrumbs
  7. 1 large egg, lightly beaten
  8. 1 tbsp. ground cumin
  9. 1/4 tsp salt
  10. 1/2 tsp pepper
  11. 2 tbsp olive oil
  12. Slice of cheese (optional)
Directions:
  1. Drain and rinse the black beans
  2. Bring 3/4 c. water to boil
  3. Add quinoa, cover, and reduce heat to low.
  4. Cook about 13 minutes (all water should be absorbed). Set aside
  5. Pulse carrot in food processor until finely chopped. Add quinoa, scallions, garlic, beans, breadcrumbs, egg, cumin, salt, and pepper until combined but slightly chunky
  6. Make 4 patties
  7. Heat oil over medium heat, and cook burgers about 8 minutes per side
  8. Top with cheese if wanted
We ate these as is, but I'm sure would be delicious on a toasted hamburger bun!

Eggvocado

Ingredients:
  1. Egg
  2. Avocado
Directions:
  1.  Set oven to 400 degrees
  2. Cut avocado in half and take out the pit
  3. Carve out some of the avocado so the egg will fit
  4. Crack egg into avocado
  5. Add toppings if you want (salt, pepper, garlic salt, Italian seasoning... anything!)
  6. Put eggvocado on baking sheet
  7. Cook for about 15 minutes, more or less depending on how well done you like your egg
Some egg might seep out of the avocado. You could put the eggvocado in a tin foil boat on top of the baking sheet to make clean up easier.
