Healthy Chicken Enchiladas


I cooked dinner for my parents tonight, and I wanted to make them something delicious but also healthy. Enter enchiladas made with Greek yogurt! I loved this dish. You could tell it was lighter and didn't feel like you ate a brick, but still felt satisfied.

Ingredients:
  • 8 whole wheat tortillas
  •  3 c. cooked chicken breast (I used rotisserie chicken but you could shred chicken breasts)
  • 5 oz. can of chopped green chiles
  • 2 c. fat free plain Greek yogurt
  • Lime
  • 1 tsp ground black pepper
  • 1 tbsp cumin
  • 2 c. salsa
  • 1 c. shredded cheese
Directions:
  1. Preheat oven to 350 degrees
  2. Grease pan with olive oil or cooking spray
  3. Mix together chicken, yogurt, green chiles, the juice of the lime, cumin, and pepper
  4. Pour 1 c. of the salsa on the bottom of the pan
  5. Put 1/2 c. of the chicken mixture in the center of each tortilla and roll up. Place flap down on top of the salsa into the baking dish
  6. Pour the rest of the salsa on top of the enchiladas
  7. Sprinkle cheese on top
  8. Bake for about 30 minutes or until cheese is melted
