Baked Meatballs

I loveeee meatballs. I also love that you can make a bunch, eat what you want, and then freeze the rest for when you need them. These Classic Italian Meatballs are delicious, but they're fried. Here is a recipe for meatballs I got from a friend that are just as delicious, but are baked. I also think they're a lot easier because you just combine everything and throw it in the oven.

Ingredients:
  • 1 lb. hamburger
  • 2 eggs
  • 1 tbsp. pesto
  • 1/2 c. skim milk
  • 1/2 c. Parmesan
  • 1 c. breadcrumbs
  • 1 small onion
  • 2 cloves minced garlic
  • 1/2 tsp. oregano
  • 1/4 c. fresh basil, cut up in small pieces
  • Salt and pepper to taste
Directions:
  1. Heat oven to 350 degrees
  2. Beat eggs
  3. Mince the onion
  4. Mix all ingredients together until uniform
  5. Make golfball sized meatballs and place on greased baking sheet
  6. Bake for about 30 minutes
Enjoy!
