I loveeee meatballs. I also love that you can make a bunch, eat what you want, and then freeze the rest for when you need them. These Classic Italian Meatballs are delicious, but they're fried. Here is a recipe for meatballs I got from a friend that are just as delicious, but are baked. I also think they're a lot easier because you just combine everything and throw it in the oven.
Ingredients:
- 1 lb. hamburger
- 2 eggs
- 1 tbsp. pesto
- 1/2 c. skim milk
- 1/2 c. Parmesan
- 1 c. breadcrumbs
- 1 small onion
- 2 cloves minced garlic
- 1/2 tsp. oregano
- 1/4 c. fresh basil, cut up in small pieces
- Salt and pepper to taste
- Heat oven to 350 degrees
- Beat eggs
- Mince the onion
- Mix all ingredients together until uniform
- Make golfball sized meatballs and place on greased baking sheet
- Bake for about 30 minutes
