This is the EASIEST way to make shredded chicken from a boneless, skinless chicken breast. The old school way is to tear apart the chicken with forks, but try this and you will never go back! You do need a stand up mixer.
Ingredients:
- Boneless skinless chicken breast (I usually make about 2 at a time)
- Boil a pot full of water (make sure you have enough water to cover chicken)
- Cut any fat off of chicken
- Add chicken into water
- When water starts to boil again, put cover on, reduce heat to low, and heat for about 15 minutes or until chicken is cooked all the way through
- Drain chicken and water
- Place chicken in stand up mixer (use tongs as the chicken will be hot)
- Turn mixer up to speed 4 for about 30 seconds and watch as the chicken tears apart!
