Garlic and Rosemary Roasted Sweet Potato Wedges

I had a sweet potato sitting around our apartment for a few weeks and finally wanted to do something with it. My Parmesan Baked Zucchini Chips are such a hit and I wanted to try something similar.

  • One sweet potato
  • 1/2 tsp minced garlic
  • 1/2 tsp rosemary
  • 2 tbsp. EVOO
  • Salt
  1. Preheat oven to 400 degrees
  2. Peel sweet potato
    We need a new peeler, this took me FOREVER
  3. Cut potato into even sized wedges
  4. Add potato wedges to bowl, drizzle over olive oil, minced garlic, rosemary, and salt
  5. Mix with hands
  6. Put aluminum foil over cookie sheet, and then cooling rack over cookie sheet
  7. Place wedges on top of cooling rack and sprinkle with more salt
  8. Bake for about 40 minutes or until potatoes are crisp, but not burnt
