I had a sweet potato sitting around our apartment for a few weeks and finally wanted to do something with it. My Parmesan Baked Zucchini Chips are such a hit and I wanted to try something similar.
Ingredients:
- One sweet potato
- 1/2 tsp minced garlic
- 1/2 tsp rosemary
- 2 tbsp. EVOO
- Salt
- Preheat oven to 400 degrees
- Peel sweet potato
We need a new peeler, this took me FOREVER - Cut potato into even sized wedges
- Add potato wedges to bowl, drizzle over olive oil, minced garlic, rosemary, and salt
- Mix with hands
- Put aluminum foil over cookie sheet, and then cooling rack over cookie sheet
- Place wedges on top of cooling rack and sprinkle with more salt
- Bake for about 40 minutes or until potatoes are crisp, but not burnt
