Ingredients:
- 5 c. water
- 3 1/4 c. red wine (almost one bottle)
- 3/4 pound spaghetti
- Sea salt
- 1/4 c. EVOO
- 2 tsp. minced garlic
- 1/4 tsp. crushed red pepper flakes
- 1/2 c. chopped parsley
- 1 c. mixed nuts
- 1 c. Parmesan
- In a pan, combine water, 3 cups of water, and a dash of salt.
- Bring to a boil
- Add spaghetti and cook until al dente
- Reserve 1/4 c. of cooking liquid before draining everything else
- Chop nuts
- In a skillet, heat 2 tbsp. of oil. Add garlic, red, pepper, and salt, and cook for 1 minute
- Add 1/4 c. wine and 1/4 c. cooking liquid and bring to simmer
- Stir in pasta, parsley, nuts, 1/2 c. cheese, and 2 tbsp. EVOO
- Season with salt and pepper
- Serve with more Parmesan on top
