Red Wine, Mixed Nut, and Parsley Pasta




My New Years resolution for 2013 was to make 100 new meals. So when I got to meal #100, I knew it had to be something good. I saw this recipe a few weeks ago and was blown away.  Pasta... boiled in WINE?! What?! I had to try it. Let me say, this was insanely delicious. I had two friends over for dinner and they both gobbled it down as well. And it was kind of fun to eat purple pasta. If you like wine, and if you like pasta, you will be in heaven!!

Ingredients:
  • 5 c. water
  • 3 1/4 c. red wine (almost one bottle)
  • 3/4 pound spaghetti
  • Sea salt
  • 1/4 c. EVOO
  • 2 tsp. minced garlic
  • 1/4 tsp. crushed red pepper flakes
  • 1/2 c. chopped parsley
  • 1 c. mixed nuts
  • 1 c. Parmesan
Directions:
  1. In a pan, combine water, 3 cups of water, and a dash of salt.
  2. Bring to a boil
  3. Add spaghetti and cook until al dente
  4. Reserve 1/4 c. of cooking liquid before draining everything else
  5. Chop nuts 
  6. In a skillet, heat 2 tbsp. of oil. Add garlic, red, pepper, and salt, and cook for 1 minute
  7. Add 1/4 c. wine and 1/4 c. cooking liquid and bring to simmer
  8. Stir in pasta, parsley, nuts, 1/2 c. cheese, and 2 tbsp. EVOO
  9. Season with salt and pepper
  10. Serve with more Parmesan on top
We ate this with Coconut Oil Roasted Cauliflower and Cinnamon Sugar and Honey Grilled Peaches for dessert
