When you are in need of a good, hearty breakfast, this is for you. I've eaten this entire thing by myself, but this is the perfect thing to double or triple and make for a large group of people.
Ingredients:
- 1 package of hash browns
- 2 eggs
- 1/2 c. shredded cheddar cheese
- Olive oil
- Salt and pepper
- Heat olive oil over medium heat on a skillet
- Add one layer of hash browns and press down into skillet
- Cook for about 8 minutes or until hash browns are cooked on one side
- Drizzle with more olive oil and flip hash browns over
- Crack eggs in a bowl and scramble
- Pour eggs over hash browns with 1/4 c. cheese and mix everything together
- Cook until eggs are set and hash browns are all browned
- Remove from heat, and top with remaining cheese and salt and pepper
