Cheesy Eggy Hash Browns

When you are in need of a good, hearty breakfast, this is for you. I've eaten this entire thing by myself, but this is the perfect thing to double or triple and make for a large group of people.

  • 1 package of hash browns
  • 2 eggs
  • 1/2 c. shredded cheddar cheese 
  • Olive oil
  • Salt and pepper
  1. Heat olive oil over medium heat on a skillet
  2. Add one layer of hash browns and press down into skillet
  3. Cook for about 8 minutes or until hash browns are cooked on one side
  4. Drizzle with more olive oil and flip hash browns over
  5. Crack eggs in a bowl and scramble
  6. Pour eggs over hash browns with 1/4 c. cheese and mix everything together
  7. Cook until eggs are set and hash browns are all browned
  8. Remove from heat, and top with remaining cheese and salt and pepper
