I still think coconut oil is one of the weirdest things to cook with because I also use it on my skin. While roasting, it gave the cauliflower a summery, fresh, gummy texture. Delicious!
Ingredients:
- One head of cauliflower
- 1 tbsp. melted coconut oil
- 1 tsp. minced garlic
- Dash of paprika
- 2 pinches of sea salt
- Set oven to 425 degrees
- Set aluminum foil over baking sheet
- Cut up cauliflower into bite sizes and place on sheet
- Cover in oil, garlic, paprika, and salt, and mix around with hands
- Roast for 25 minutes, stirring halfway through
