Spaghetti Squash Scrambled Eggs

 

I kept seeing this meal on Instagram from people I follow who are also doing the Whole30 Challenge. I found it a pretty bizarre combination so I figured I might as well try it. Very interesting! Not my favorite thing, to be honest, but I can see how people would like it.

Ingredients:
  • Spaghetti squash noodles (see here on how to cook)
  • 1 tsp olive oil
  • 2 eggs
  • Dash of salt
Directions:
  1. Dry spaghetti squash noodles with a paper towel
  2. Add olive oil to skillet over medium heat
  3. When hot enough, add noodles to skillet
  4. After 5 minutes, pour whisked eggs over noodles and cook until done
  5. Top with salt
