Roasted Sweet Potato, Cubed Avocado, and Scrambled Eggs

  • One sweet potato
  • 1 tbsp. olive oil
  • 1 avocado
  • 2 eggs
  • Salt
  1. Heat oven to 375 degrees
  2. Skin sweet potato and cut into cubes
  3. Pour olive oil over sweet potato and cook for 25 minutes
  4. Meanwhile, cut avocado in half, take out pit, and cut into cubes
  5. Whisk together the eggs and scramble over medium heat
  6. Stir together potatoes, avocado, and eggs, and top with salt
