Easy Poached Eggs with Sauteed Pepper and Spinach

I've been scrambling so many eggs lately I wanted to try something new. It really wasn't as hard as I thought it would be!

  • Eggs
  • 2 tsp. vinegar
  1. Bring a pan of water to almost boiling
  2. Add the vinegar to the water
  3. Crack eggs into a small cup, then slowly pour the egg into the water
  4. Move the whites by the yolk with a spoon
  5. Turn off the heat and put the lid on top
  6. Cook for 3 minutes
  7. Remove each egg with a spoon
I ate two poached eggs with sauteed pepper and spinach (heat 1 tsp. olive oil over medium heat, add spinach and cut up pepper, and cook until wilted). Delicious!
