Colorful Breakfast


It's snowing in Chicago... again. I have a feeling it's never going to stop. Regardless, I've tried to make my food as bright as possible to pretend that it's warm outside.

  • 2 c. spinach
  • 1/2 c. cut up spinach (I used yellow, orange, and red)
  • 1 tsp. coconut oil
  • 2 eggs
  • 1/4 c. hot salsa
  • Salt
  1. Heat coconut oil over medium heat
  2. Add spinach and cook until it wilts
  3. Add peppers and whisked eggs
  4. Cook until eggs are done
  5. Top with salsa and salt
