Lemon and Garlic Salmon

 

Foil roasting is one of the easiest ways I've found to cook fish. I have never loved lemon, but this gives the fish just enough flavor without being overpowering. I loved it!

 Ingredients:
  • 1 large salmon filet
  • 1 tbp. olive oil
  • 1 lemon
  • 1 tbsp. green onions
  • 3 cloves of garlic, minced
  • 1 tsp. kosher salt
  • Pepper
Directions:
  1. Heat oven to 400 degrees
  2. Place salmon on top of a large piece of aluminum foil
  3. Pour olive oil over fish and then top with minced garlic
  4. Cut lemon into slices and place over olive oil and garlic
  5. Sprinkle with salt and pepper
  6. Fold aluminum foil up into a tent over fish so that no air can escape, but there is enough space for air to circulate inside with the fish
  7. Cook for 25 minutes
  8. Be very careful unwrapping the foil as it will be hot!
