Vegetable Tian


I saw a picture of this dish on Pinterest and it was one of the prettiest things I've ever seen. Andrew and my October date was to go to Garden Patch Farms and go apple picking. We got a few apples, but what I was more excited about was all of the vegetables. It was so cool to see how everything grows! We got zucchini, eggplant, green pepper, squash, tomatoes, brussel sprouts, and kale. Some of those went into our dish. Farm to table!

Ingredients:
  • Small yellow onion
  • 2 cloves garlic
  • Two baking potatoes
  • Tomatoes
  • Zucchini
  • Yellow squash
  • Eggplant
  • 3 tsp olive oil
  • 5 fresh basil leaves, chopped
  • 1 tsp. dried thyme
  • Salt and pepper
  • 1 c. Parmesan cheese
Directions:
  1. Set oven to 400 degrees
  2. Dice onion and mince garlic
  3. In a nonstick skillet, heat 2 tsp olive oil over medium-low heat
  4. Add onions and cook for 8 minutes
  5. Add garlic and cook for another minute
  6. Spread mixture over the bottom of a baking dish
  7. Cut up all vegetables in even widths

  8. Arrange vegetables in rows one-by-one
  9. Sprinkle with salt, pepper, thyme, basil, and another tsp of OO
  10. Cover with tin foil and bake for 30 minutes
  11. Remove tin foil, cover in cheese, and bake another 25 minutes
