Sausage and Vegetable Foil Packets

We had a ton of green peppers left over from when we went to Garden Patch Farms. Andrew had been talking about eating sausage and peppers for awhile, so when we got all these peppers this was the perfect time.

What I love about this is you can make a foil packet for everyone you're making dinner for. In Andrew's, I put onion, green pepper, potato, and sausage. In mine, I put all the previous items, plus carrots, sweet potato, and red potato. Yum!

Ingredients:
  • Vegetables of your choosing (I used one yellow onion, 4 green peppers, 1 baking potato, 1 sweet potato, 1 red potato, 10 baby carrots cut in half, and a tomato)
  • 1/2 lb. mild Italian sausage
  • 2 tbsp. butter
  • Salt and pepper
  • 2 tsp. minced garlic
Directions:
  • Heat oven to 350 degrees
  • Put one piece of aluminum foil on top of another piece of aluminum foil and make a T shape (I made 2 of these) 
  • Spray liberally with cooking spray
  • Cut up all vegetables
  • Cut sausage into 1-inch pieces
  • Put 1/2 of all vegetables and sausage in the middle of one T and the rest in the middle of the other 
  • Top each with 1 tbsp. butter, tsp. minced garlic, salt and pepper 
  • Bring up all sides of the T and seal edges so no air can escape 
  • Bake for 45 minutes
This was SO good. And so filling. The vegetables roasted perfectly.
