I kept seeing this meal on Instagram from people I follow who are also doing the Whole30 Challenge. I found it a pretty bizarre combination so I figured I might as well try it. Very interesting! Not my favorite thing, to be honest, but I can see how people would like it.
Ingredients:
- Spaghetti squash noodles (see here on how to cook)
- 1 tsp olive oil
- 2 eggs
- Dash of salt
- Dry spaghetti squash noodles with a paper towel
- Add olive oil to skillet over medium heat
- When hot enough, add noodles to skillet
- After 5 minutes, pour whisked eggs over noodles and cook until done
- Top with salt
