Foil roasting is one of the easiest ways I've found to cook fish. I have never loved lemon, but this gives the fish just enough flavor without being overpowering. I loved it!
Ingredients:
- 1 large salmon filet
- 1 tbp. olive oil
- 1 lemon
- 1 tbsp. green onions
- 3 cloves of garlic, minced
- 1 tsp. kosher salt
- Pepper
- Heat oven to 400 degrees
- Place salmon on top of a large piece of aluminum foil
- Pour olive oil over fish and then top with minced garlic
- Cut lemon into slices and place over olive oil and garlic
- Sprinkle with salt and pepper
- Fold aluminum foil up into a tent over fish so that no air can escape, but there is enough space for air to circulate inside with the fish
- Cook for 25 minutes
- Be very careful unwrapping the foil as it will be hot!
