It's snowing in Chicago... again. I have a feeling it's never going to stop. Regardless, I've tried to make my food as bright as possible to pretend that it's warm outside.
Ingredients:
- 2 c. spinach
- 1/2 c. cut up spinach (I used yellow, orange, and red)
- 1 tsp. coconut oil
- 2 eggs
- 1/4 c. hot salsa
- Salt
- Heat coconut oil over medium heat
- Add spinach and cook until it wilts
- Add peppers and whisked eggs
- Cook until eggs are done
- Top with salsa and salt
