What's better... cool ranch or spicy nacho?! This is a big debate in our house. Sometime we're both for cool ranch, and sometimes we like nacho better. I hadn't made chicken in awhile, and Andrew just bought a bag of Doritos, so I figured why not combine the two?!
Our verdict: the spicy nacho was better.
Makes: 4 chicken fingers
Ingredients:
- 1 boneless skinless chicken breast
- 1 c. whole milk
- 1/2 c. flour
- 2 eggs
- 1 c. cool ranch Doritos
- 1 c. spicy nacho Doritos
- Red pepper flakes (optional)
- Heat oven to 375 degrees
- Cut off any fat from chicken
- Cut in half longwise (to make thinner), then cut in half so you have four thin strips
- Fill five bowls: milk, flour, eggs, Doritos, and Doritos
- Optional: add red pepper flakes to flour and mix
- Crush Doritos (I used my hand, you could also use a food processor)
- Whisk eggs completely
- Take chicken from milk to flour to eggs to Doritos and place in greased baking pan
- Take the other chicken through same steps
- Cover with aluminum foil and bake for 20 minutes
- Take aluminum foil off and bake for another 5 minutes or until completely done and no longer pink in the middle
