Butternut Squash and Sage Ravioli with a Browned Butter and Fried Rosemary Sauce and Kale


My brown butter obsession continues...

It all started with Browned Butter and Cinnamon Spice Rice Krispies Treats. Then I went to Trader Joes to buy more Butternut Squash Ravioli, and the friendly check out person said he eats that ravioli with browned butter and sage. I've never cooked with sage before, but I found this recipe that uses fried rosemary. Yum!

Ingredients:
  • Butternut squash and sage ravioli (my Mom bought this from Costco)
  • 1 1/2 sticks of butter
  • 1 bunch of rosemary
  • 1/2 c. Parmesan
  • Salt and pepper
  • 1 bunch kale
Directions:
  1. Melt butter over medium heat
  2. Add rosemary
  3. Stirring, fry rosemary until butter browns (this takes about 5-10 minutes. Don't let the butter brown too much that it burns!)
  4. Remove rosemary and throw away
  5. Cook ravioli according to directions and drain
  6. Cover pasta in browned butter

  7. Toss
  8. Add in torn kale if you like
  9. Serve with Parmesan cheese, salt, and pepper
