Someone I follow in Instagram is also doing the Whole30 challenge and she has a lot of great ideas for approved meals. One she has made a few times was blueberry scrambled eggs. I was pretty skeptical, but it actually was pretty delicious!
Ingredients:
- 1/2 c. fresh blueberries
- 2 eggs
- 1 tsp olive oil
- Heat skillet over medium heat
- Add olive oil and cook until hot
- Whisk eggs and add blueberries in
- Add to skillet and cook until done

Next time, try this: whisk the eggs in a bowl with coconut aminos, cinnamon, and black pepper. Then, mix the blueberries in there. THEN, dump it in the skillet (I use coconut oil) and cook away. Sooooooooo tasty.
