I'm definitely starting to experiment more in the kitchen. I have never made any of the above items, and I am so pleased how this turned out! I wish I had made more and can't wait to make it again.
Ingredients:
- One medium onion
- 1 tbsp. olive oil
- 2 cloves garlic, minced
- 1 head of cauliflower
- 2 chicken breasts, skinless and boneless
- 1/2 tsp. paprika
- 1/2 tsp. red pepper flakes
- 1/8 tsp. cumin
- Add olive oil to pan and cook over medium heat
- Cut onion into long strips and add to pan
- Stir every once in awhile (you have to stir enough so all parts of the onion browns, but not too much where nothing browns)
- While cooking, use a cheese grater to grate cauliflower down to "rice"
- Also, cut all fat off chicken and cut into cubes
- Sprinkle paprika, red pepper, and cumin over chicken
- When onion is 80% done, add minced garlic to onion along with "rice" and the chicken
- Stir, and cook until chicken is no longer pink
