I saw this idea on Instagram and immediately thought, "Why didn't I think of that?!" This was SO GOOD. I ate the entire thing and could have eaten 4 more servings. Great alternative when you're craving something super starchy.
Ingredients:
- Sweet potato
- Clove of garlic, minced
- 1 tsp olive oil
- Peel the sweet potato and put in your spiralizer to make "noodles"
- Put "noodles" in food processor and pulse until you have rice sized chunks
- Heat olive oil in skillet over medium heat
- When hot, add garlic and sweet potato "rice"
- Cook until your liking (I made mine pretty brown and crispy)
