Pecan Pie Bars

Pecan pie is my favorite! I like it even better than pumpkin pie. Bars are perfect as they're easier to eat, and you can cut smaller portions than a full slice. These are easy and so completely delicious!

Ingredients:
  • 3 sticks butter
  • 1 2/3 c. brown sugar
  • 2 2/3 c. flour
  • 1/2 tsp. salt
  • 1/4 tsp. cinnamon
  • 1/3 c. honey
  • 2 tbsp. heavy cream
  • 2 1/2 c. pecans
  • 2 tsp. vanilla extract
  • Whipped cream (optional)
Directions:
  1. Preheat oven to 350 degrees
  2. Line a 9x13 brownie pan with foil and spray with cooking spray
  3. Beat 2 sticks of butter and 2/3 c. brown sugar together for 2 minutes
  4. Add together 2 2/3 c. flour, 1/2 tsp. salt, and 1/4 tsp. cinnamon
  5. Add the dry ingredients to the butter and sugar and mix fully 
  6. Spread into pan and press down with hands until flattened evenly
  7. Bake for 20 minutes
  8. Put pecans in a large Ziploc bag and hit with a hammer until chopped, and set aside
  9. Meanwhile, melt the other stick of butter in a small sauce pan over medium low
  10. Add 1 c. brown sugar, the honey, and the cream
  11. Let simmer for 1 minute
  12. Stir in chopped pecans and vanilla extract
  13. When crust is done, pour filling into crust
  14. Bake for another 20 minutes
  15. Remove from oven and let cool completely
  16. Lift bars out of pan and cut
  17. Optional - top with whipped cream!
