Pumpkin Cookies


This recipe comes from my husband's Grandmother. Ever since Andrew and I started dating, we made these every November. The cookies are so soft, and the icing is sweet and delicious. A perfect Fall cookie!

Ingredients:
  • 1 c. sugar
  • 1 egg
  • 1 c. pumpkin
  • 2 tsp. vanilla extract
  • 1 c. shortening
  • 2 c. flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/2 c. brown sugar
  • 3 tbsp. milk
  • 3 tbsp. butter
  • 1 c. powdered sugar
Directions:
  1. Set oven to 375 degrees
  2. Cream together sugar, egg, pumpkin, 1 tsp. vanilla extract, and shortening
  3. In another bowl, cream together flour, baking soda, cinnamon, and salt
  4. Sift dry ingredients and add to creamed mixture
  5. Mix well and drop by the spoonful onto ungreased cookie cheet
  6. Bake for 10-12 minutes
  7. Cool
  8. Meanwhile, make the icing: combine brown sugar, milk, and butter
  9. Boil for 2 minutes
  10. Cool and add 1 c. powdered sugar and 1 tsp. vanilla
  11. Add more powdered sugar if needed
  12. Spread on cooled cookies
