Cauliflower Garlic Mashed Potatoes


I love mashed potatoes, and I have always wanted to make pure cauliflower mashed potatoes. I thought including a little bit of cauliflower with the mashed potatoes would be a good start. And of course, adding garlic. Delicious!

Ingredients:
  • 1 head cauliflower
  • 10 mini potatoes
  • Whole head of garlic (about 8-10 cloves)
  • 1/2 stick butter
  • 1 c. milk (I used skim)
  • Salt and pepper
Directions:
  1. Chop cauliflower and potatoes (I keep the potato skins on)
  2. Bring a pot of salted water to boil
  3. Add cauliflower and potatoes
  4. Bring down heat to a simmer and cook for about 15 minutes or until a fork pierces the potato
  5. Meanwhile, boil garlic cloves (with skin on) in water for 10 minutes
  6. Drain and take skin off garlic  
  7. Saute garlic in half stick of butter over medium until browned
  8. Add garlic and butter and the milk with salt and pepper to a blender until smooth
  9. Drain potatoes and cauliflower
  10. Mash with a potato masher
  11. Add in garlic/butter/milk mixture and continue to mash
  12. Taste and add more salt and pepper if necessary
