Ingredients:
- 2 tortillas
- 1/2 c. quinoa
- 1/2 c. cheese (I used sharp cheddar)
- Any veggies (I used shredded carrots, shredded sweet potato, and spinach)
- 1 tbsp. olive oil
- Heat olive oil in a nonstick skillet over medium heat
- When hot, put down one tortilla
- Top with quinoa, cheese, and veggies
- Top with other tortilla
- Cook for 5 minutes, and then flip
- Cook until cheese is melted and tortilla is cooked to desired crispiness (I like mine almost burned)
- Remove and cut
