Imitation Potbelly's Oatmeal Chocolate Chip Cookies


My husband and I love Potbelly's, and even more so love their cookies. Andrew found this recipe somewhere for homemade oatmeal chocolate chip cookies. They are AMAZING. We make them probably once a week (probably should cut down on that...) I think they're even better than the ones in the store!

Ingredients:
  • 1 c. butter or margarine
  • 1 c. brown sugar
  • 1 c. white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 1/2 c. quick oats
  • 2 c. flour
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 c. chocolate chips
Directions:
  1. Let butter sit out for at least an hour if you can
  2. Preheat oven to 350 degrees
  3. In a large mixing bowl, cream butter and sugars. Add in egg, one at a time, mixing after each time. Mix in vanilla
  4. In a separate bowl, mix together oats, flour, baking soda, and salt
  5. Add dry ingredients slowly into the butter mixture, about one cup at a time, until everything is mixed together
  6. Mix in chocolate chips
  7. Form in medium sized balls, place cookie sheet covered with a silpat
  8. Bake for about 10 minutes
  9. Let cool for about 5 minutes and then transfer to a wire rack

TIP: When storing cookies, add in a piece of bread. Over the next few days, the bread will become hard, while the cookies remain soft!

Sometimes we add a Reeses peanut butter cup to the inside of one of the cookies... try if you want even more chocolate!
