When one dish has four of my favorite things: garlic, butter, spinach, and pasta, I immediately had to try this dish! Even Andrew, who has a pretty limited pallet, got seconds. I could make this over and over again. If you love butter and love garlic, you will LOVE this! Even if you don't love spinach, it's a good way to sneak it into your meal without much taste/overload. I could almost eat this without Parmesan cheese on top... which is saying a lot for me. This is great as a main meal, or could be a hearty side.
Ingredients:
- 1 lb. pasta (I used spaghetti in this picture but used bow tie in Parmesan Crusted Chicken)
- 6 tbsp. butter
- 8 cloves of minced garlic
- 1 large bunch of basil
- 1 large bunch baby spinach
- 1/4 c. Parmesan cheese
- Salt and pepper
- Cook the pasta according to directions on the package
- Chop basil and spinach
- Set skillet over medium low heat and melt the butter
- Add garlic and cook for 4 minutes, stirring
- Add the basil and spinach to butter and garlic, stirring so everything gets evenly covered
- Stir for two minutes to let the herbs wilt down
- Sprinkle with salt
- Make sure pasta is drained, and add to the butter (or add butter to the pasta pan)
- Toss again with salt and a little pepper
- Mix one more time to make sure everything is even
- Top with Parmesan
