I had been making a lot of chicken, and wanted to try a new protein - enter shrimp! I found this and loved that it called for Greek yogurt, and I was intrigued.
Ingredients:
- 12 ounce pasta (I used penne but you could use anything like bow tie)
- 1 tbsp olive oil
- 4 cloves minced garlic
- Pinch crushed red pepper flakes
- 8 ounces of mushrooms, cleaned and sliced
- 2 medium tomatoes chopped
- Salt and pepper
- 4 cups fresh spinach
- 10 ounces medium raw shrimp
- 1/2 c. marinara sauce
- 1/3 c. Greek yogurt (any kind you want!)
- 1/3 c. grated parmesan cheese
- Peel and devein shrimp
- Cook penne, drain, and set aside
- In a large skillet, heat olive over medium low heat
- Add in garlic and red pepper flakes and cook for 2 minutes
- Add in mushrooms, tomatoes, and salt and pepper, and cook for 7 minutes
- Turn heat to medium high and add shrimp. Stir and cook for 3 minutes. Make sure shrimp are pink and opaque from all sides
- Remove from heat, add in spinach, and cover pan with lid to let spinach wilt
- Remove lid and put heat on low. Add pasta, yogurt, and pasta sauce. Mix and let heat for 5 minutes
- Put on plate and add cheese
