Ingredients:
- 1/4 c. olive oil
- 1 c. finely chopped onions
- 3/4 c. finely chopped carrots
- 3/4 c. finely chopped celery
- 6 1/2 c. (52 oz) canned whole tomatoes, undrained
- 1 garlic clove, minced
- 1 tbsp. salt
- 1 1/2 tsp. sugar
- Heat oil in large saucepan. Add onions, carrots, and celery. Cook and stir a few minutes or until crisp and tender (do not let them brown)
- Add remaining ingredients; simmer, uncovered, for 45 minutes or until thickened, stirring occasionally
- Pass through a food mill or blend slightly with immersion blender. Taste and adjust seasonings as desired
