Loaded Quinoa Veggie Burger
Ingredients:
- 1/2 c uncooked quinoa
- 1 carrot, chopped
- 4 scallions, sliced
- 2 cloves of garlic (I used minced)
- 15 ounces can of black beans
- 1/4 c. Italian breadcrumbs
- 1 large egg, lightly beaten
- 1 tbsp. ground cumin
- 1/4 tsp salt
- 1/2 tsp pepper
- 2 tbsp olive oil
- Slice of cheese (optional)
- Drain and rinse the black beans
- Bring 3/4 c. water to boil
- Add quinoa, cover, and reduce heat to low.
- Cook about 13 minutes (all water should be absorbed). Set aside
- Pulse carrot in food processor until finely chopped. Add quinoa, scallions, garlic, beans, breadcrumbs, egg, cumin, salt, and pepper until combined but slightly chunky
- Make 4 patties
- Heat oil over medium heat, and cook burgers about 8 minutes per side
- Top with cheese if wanted
Eggvocado
Ingredients:
- Egg
- Avocado
- Set oven to 400 degrees
- Cut avocado in half and take out the pit
- Carve out some of the avocado so the egg will fit
- Crack egg into avocado
- Add toppings if you want (salt, pepper, garlic salt, Italian seasoning... anything!)
- Put eggvocado on baking sheet
- Cook for about 15 minutes, more or less depending on how well done you like your egg
