I bought a huge sack of avocados from Costco and didn't know what to do with them. This was delicious! Fresh tasting, and totally took away my craving for a heavy alfredo.
Ingredients:
- 12 small tomatoes, cut in half
- 4 tbsp olive oil
- Fettucini
- 2 ripe avocados
- 2 cloves of garlic (I use pre-minced)
- 2 tbsp lemon juice
- Parmesan cheese
- Salt and pepper to taste
Directions:
- Preheat over to 300 degrees
- Place tomatoes on baking sheet with parchment paper. Drizzle with olive oil, and bake for one hour, lightly mixing half way through
- Cook pasta and set aside (I always cook al dente, about a minute or two before ready)
- Cut avocados in half, remove the seed, and then remove the skins
- Put avocado in food processor with 2 tbsp olive oil, garlic, salt, and lemon juice. Pulse until smooth and creamy, scraping down sides as necessary
- Add avocado mixture over pasta until everything is covered
- Top with tomatoes, parmesan cheese, and salt and pepper
