I cooked dinner for my parents tonight, and I wanted to make them something delicious but also healthy. Enter enchiladas made with Greek yogurt! I loved this dish. You could tell it was lighter and didn't feel like you ate a brick, but still felt satisfied.
Ingredients:
- 8 whole wheat tortillas
- 3 c. cooked chicken breast (I used rotisserie chicken but you could shred chicken breasts)
- 5 oz. can of chopped green chiles
- 2 c. fat free plain Greek yogurt
- Lime
- 1 tsp ground black pepper
- 1 tbsp cumin
- 2 c. salsa
- 1 c. shredded cheese
- Preheat oven to 350 degrees
- Grease pan with olive oil or cooking spray
- Mix together chicken, yogurt, green chiles, the juice of the lime, cumin, and pepper
- Pour 1 c. of the salsa on the bottom of the pan
- Put 1/2 c. of the chicken mixture in the center of each tortilla and roll up. Place flap down on top of the salsa into the baking dish
- Pour the rest of the salsa on top of the enchiladas
- Sprinkle cheese on top
- Bake for about 30 minutes or until cheese is melted
