This recipe comes from my husband's Grandmother. Ever since Andrew and I started dating, we made these every November. The cookies are so soft, and the icing is sweet and delicious. A perfect Fall cookie!
Ingredients:
- 1 c. sugar
- 1 egg
- 1 c. pumpkin
- 2 tsp. vanilla extract
- 1 c. shortening
- 2 c. flour
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1/2 c. brown sugar
- 3 tbsp. milk
- 3 tbsp. butter
- 1 c. powdered sugar
- Set oven to 375 degrees
- Cream together sugar, egg, pumpkin, 1 tsp. vanilla extract, and shortening
- In another bowl, cream together flour, baking soda, cinnamon, and salt
- Sift dry ingredients and add to creamed mixture
- Mix well and drop by the spoonful onto ungreased cookie cheet
- Bake for 10-12 minutes
- Cool
- Meanwhile, make the icing: combine brown sugar, milk, and butter
- Boil for 2 minutes
- Cool and add 1 c. powdered sugar and 1 tsp. vanilla
- Add more powdered sugar if needed
- Spread on cooled cookies
