I love mashed potatoes, and I have always wanted to make pure cauliflower mashed potatoes. I thought including a little bit of cauliflower with the mashed potatoes would be a good start. And of course, adding garlic. Delicious!
Ingredients:
- 1 head cauliflower
- 10 mini potatoes
- Whole head of garlic (about 8-10 cloves)
- 1/2 stick butter
- 1 c. milk (I used skim)
- Salt and pepper
- Chop cauliflower and potatoes (I keep the potato skins on)
- Bring a pot of salted water to boil
- Add cauliflower and potatoes
- Bring down heat to a simmer and cook for about 15 minutes or until a fork pierces the potato
- Meanwhile, boil garlic cloves (with skin on) in water for 10 minutes
- Drain and take skin off garlic
- Saute garlic in half stick of butter over medium until browned
- Add garlic and butter and the milk with salt and pepper to a blender until smooth
- Drain potatoes and cauliflower
- Mash with a potato masher
- Add in garlic/butter/milk mixture and continue to mash
- Taste and add more salt and pepper if necessary
