Pineapple Ice Cream

 

This is so good that as I was typing this, I went and put some bananas in the freezer so I could have this tomorrow night.

Ingredients:
  • Chopped pineapple (about 1c.)
  • Frozen banana (4 bananas, chopped, frozen overnight)
  • Pinch of sea salt
Directions:
  1. Place in food processor and pulse.

Beef Brisket

 

I had never made brisket before, but I love a good tender meat. I found this recipe on Predominantly Paleo and loved it! I think mine was too thick so not all of it was in the liquid when it cooked and was a bit dry in certain parts, but I can't wait to try this again and do it better!

Ingredients:
  • Avocado oil
  • Ground pepper
  • 4 lb. brisket
  •  1 large onion, sliced
  • 32 oz. broth (she suggests beef but you could use chicken or vegetable)
  • 5 cloves minced garlic
  • 1 c. baby carrots
Directions:
  1. Pour some avocado oil into a large pot and heat M/H
  2. Rub pepper on all sides of brisket
  3. Place brisket in hot oil
  4. In 7 minutes, flip to other side
  5. Cook for another 7 minutes or until both sides are browned
  6. Place brisket on plate
  7. Pour sliced onion into pot
  8. Once both sides of brisket are nicely browned, place sliced onions in the bottom on the stockpot
  9. Put brisket back on top
  10. Pour in broth, garlic, and carrots and stir lightly
  11. Simmer for 4 hours

Lightly Scrambled Eggs Prosciutto Toast

 

My food Instagram account follows all other food accounts, and I saw something similar to this on someone's Instagram who was out to breakfast. Here is my re-creation.

While you're toasting bread, lightly scramble eggs. Butter the toast and top with eggs and prosciutto.  Top with salt and pepper.

Pom Guac

 

I saw this on a lot of Instagram accounts and didn't think I'd like the combination. But I was glad to be proved wrong! The seeds add a delicious burst to something I couldn't think could get any better. And all you have to do is combine guac with seeds (buy seeds to make your life 500% easier than seeding a pomegranate).

Cookie Butter Ice Cream Milkshake

 

Have you ever had Cookie Butter from Trader Joes? Have you ever had Cookie Butter Ice Cream? If not, drop what you're doing and drive immediately to your nearest Trader Joes. I searched out a few this summer, and finally found this, and the gallon was gone by the next day. It's SO good!  While I was checking out, the TJs employee suggested I make a milkshake. OKAY.

Ingredients:
  • Cookie Butter Ice Cream
  • Chocolate chips
  • Peanut butter
  • Whipped cream
Directions:
  1. Add ingredients to a blender (more or less or whatever you want that day ie more pb for a more peanut buttery taste, etc...)
  2. Top with lots and lots of whipped cream
  3. TREAT TO SELF!

Coconut Oil Fried Figs



This was one of the most delicious things I've ever made, was fast, and tasted exactly like warm apple pie!

Ingredients:
  • Coconut oil (about 1 T)
  • Figs (I used 10)
  • Cinnamon
Directions:
  1. Warm pan over medium heat
  2. While heating, cut figs into fourths
  3. Add coconut oil
  4. Add figs into oil and cook until deep red
  5. Dust with cinnamon

Grilled Chicken Salad

 

I love chicken salad, but am pretty particular about my meat (I like it shredded not in chunks) and the other ingredients (I love grapes but not in my chicken salad).

Ingredients:
Directions:
  1. Cat fat off of chicken and make shallow cuts with a sharp knife
  2. Marinate chicken in the rest of the ingredients
  3. Grill
  4. Shred in stand up mixer
  5. Mix with homemade mayo and chopped walnuts
